Panthers Tailgating Recipe
  • 1 (8 to 10 pound) Boston butt pork shoulder
  • Old South State Paint, recipe follows
  • Pantherfanz Red-Zone Dry Rub, recipe follows
  • Flat beer, as needed
  • Carolina Border BBQ Sauce, recipe follows
  1. Thoroughly wash the pork shoulder in cold water and pat dry. Cover the entire shoulder with a thin layer of the Old South State Paint using a basting brush.
  2. Coat the pork shoulder with the Pantherfanz Red-Zone Dry Rub. Refrigerate for 24 hours. Remove the pork shoulder from refrigeration approximately 1 hour before cooking time.
  3. Prepare smoker; heat to 225 degrees F. and place a cast iron skillet or aluminum pan underneath the pork filled ½ of the way with flat beer and/or water. Place the pork shoulder in the smoker.
  4. Add more beer/water as it evaporates. Cook for approximately 1.5 hours per pound.
  5. When the internal temperature of the pork reaches 175 degrees F, wrap the pork shoulder in heavy duty aluminum foil.
  6. Continue to cook the pork until it reaches an internal temperature of 190 degrees F.
  7. Serve with Carolina Border BBQ Sauce.
Total cooking time averages approximate 90 minutes per pound and is dependent on initial size of the pork shoulder.
