Sweet Potato Pancakes with Cranberry Sauce

Grilled Cranberry Pancakes

Not only are these Sweet potato pancakes great for utilizing leftover sweet potatoes, but you can also throw in your leftover Thanksgiving dinner cranberries.

Cook these pancakes over an open fire or on a grill to get outside and add that smoky flavor to wake you up in the morning. Then add the cranberry sauce to the top to make all your friends and family happy.

Sweet Potato Pancakes with Cranberry Sauce

  • 1 cup maple syrup
  • 4 Tbsp. leftover cranberry sauce
  • 1½ cups milk
  • 1 cup leftover sweet potato casserole
  • ¼ cup butter, melted
  • 2 large eggs
  • 1¾ cups all-purpose flour
  • 3 Tbsp. brown sugar
  • 1 Tbsp. baking powder
  • ½ tsp. ground cinnamon
  • Salt to taste
  1. Mix syrup and cranberry sauce and set aside as a topping later.
  2. Combine all remaining ingredients into a bowl and gradually mix them until mostly smooth.
  3. Pour about a quarter cup of batter onto a greased skillet or griddle that’s been on a grill or campfire at 350°F. Cook 2 to 3 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook 1 to 2 more minutes or until puffed and thoroughly cooked. Serve with cranberry and syrup topping.
